📝 Ingredients (Samagri):
🍚 Rice (Chawal):
- Basmati Rice — 2 cups (soaked for 30 mins)
- Water — for boiling
- Salt — as per taste
- Bay leaf (tej patta), Cloves (laung), Cardamom (elaichi) — for flavour
🍗 For Marination:
- Chicken — 500 gm (bone-in preferred)
- Dahi (curd) — 1 cup
- Haldi — ½ tsp
- Lal mirch powder — 1 tsp
- Dhaniya powder — 1 tsp
- Jeera powder — 1 tsp
- Garam masala — ½ tsp
- Ginger garlic paste — 1 tbsp
- Salt — as per taste
- Achari masala — 2 tbsp (readymade ya ghar ka bana hua)
🍲 For Cooking:
- Onion — 2 large (sliced)
- Tomato — 1 chopped
- Green chillies — 2
- Mustard oil — 3 tbsp (ya koi bhi oil)
- Fresh coriander & mint leaves — chopped
- Lemon juice — 1 tbsp
- Kesar + warm milk — optional (for color & aroma)
👨🍳 How to Cook (Banane ki Vidhi):
🔸 Step 1: Rice ko ubalna
- Ek pateele mein paani garam karo, thoda sa namak aur sabut garam masale daal do.
- Soaked basmati rice daal kar 80% tak boil kar lo. Strain karke side mein rakh do.
🔸 Step 2: Chicken marinate karo
- Chicken mein dahi, saari masale aur achari masala daal kar ache se mix karo.
- 30 minutes ke liye marinate hone do (fridge mein bhi rakh sakte ho).
🔸 Step 3: Masala tayar karo
- Ek handi ya heavy bottom pan mein oil garam karo.
- Onion daal ke golden brown hone tak bhuno.
- Ab tomato aur green chillies daalo. 2–3 mins bhuno.
- Marinated chicken daal kar medium flame pe 10–15 mins tak pakao, jab tak chicken tender ho jaye.
🔸 Step 4: Layering karo
- Cooked chicken ke upar ek layer rice ki daalo.
- Uske upar chopped coriander, mint, lemon juice aur saffron milk daalo.
- Ek aur rice layer daal ke same process repeat karo.
🔸 Step 5: Dum lagao
- Pan ko foil ya lid se ache se seal kar do.
- Slow flame pe 15–20 mins dum lagao.
- 5 mins rest do phir serve karo.
🍽️ Serving Suggestion:
Achari Biryani ko dahi ya raita ke saath serve karo. Onion rings aur lemon wedges bhi daal sakte ho.

Achari masala homemade ho toh aur bhi flavourful hota hai! Mustard oil se biryani mein authentic achari kick aata hai.
