Ingredients — Samagri:
- Basmati Rice — 2 cup
- Chicken 500g (Lebanese style mein chicken zyada use hota hai)
- Onion — 2 bade (patle lambe kaate hue)
- Tomatoes — 2 (bareek kaate hue)
- Garlic — 5–6 kaliyan (bareek crushed)
- Ginger — 1 inch (grated)
- Curd (Dahi) — 1/2 cup
- Lemon juice — 2 tbsp
- Garam Masala — 1 tsp
- Cinnamon (Dalchini) — 1 stick
- Cloves (Laung) — 3–4
- Cardamom (Elaichi) — 2
- Bay Leaf (Tej Patta) — 1
- Olive Oil ya Normal Oil — 3 tbsp
- Salt — swad anusar
- Black Pepper — 1 tsp
- Fresh Coriander & Mint — garnishing ke liye
- Dry Fruits — Roasted cashew & almonds (optional, lekin Lebanese touch ke liye zaruri hai)
Steps — Banane ka Tarika:
Step 1: Rice ko tayar karo
- Basmati rice ko ache se dho kar 30 mins ke liye bhigo do.
- Ek patile mein paani ubalo, thoda sa salt aur 1 tsp oil daal do.
- Phir rice daal ke 80% tak paka lo (matlab fully nahi, thoda kachcha chhodna hai).
- Rice ko chhan ke side mein rakh do.
Step 2: Chicken/Meat ka masala banaao
- Ek bade pan mein oil garam karo.
- Cinnamon, cloves, cardamom, bay leaf daal kar thoda bhuno.
- Ab ismein sliced onion daalo aur golden brown hone tak fry karo.
- Ginger, garlic daal kar ek minute bhuno.
- Ab ismein chicken/mutton daal do aur ache se bhun lo jab tak colour change ho jaaye.
- Tomatoes, salt, black pepper, garam masala, aur dahi daal do
- Dhak ke 10–15 mins tak medium flame par pakao jab tak chicken soft ho jaaye.
- Lemon juice daal ke mix karo.
Step 3: Biryani ko layer karo
- Ek handi ya thick-bottomed vessel lo.
- Pehle ek layer rice, fir chicken masala, fir thoda coriander/mint daalo.
- Aise 2–3 layers banao.
- Upar se roasted dry fruits daal sakte ho for Lebanese touch.
- Dhakkan bandh karke 10 mins dum par chhoti aanch par rakho.
Step 4: Serve karo
- Garma garam Lebanese style biryani ready hai!
- Isse plain curd, salad, ya garlic sauce ke saath enjoy karo.
- Thoda zyada healthy aur Arabic touch ke saath simple biryani hai — no heavy masale!
Aap chahein to vegetarian version bhi bana sakte hain, bas chicken ki jagah paneer ya vegetables daal dein.
