Moti Biryani Recipe - Royal Biryani with Pearls of Flavor! 👑🍚

Moti Biryani, naam sunte hi ek shahi taste ka ehsaas hota hai. Yeh biryani dusri biryanis se thodi alag hoti hai — isme hoti hai moti jaisi soft and juicy meatballs ya pearls jo is dish ko ek royal nawabi touch deti hai! 😍

Aaj hum banayenge ek simple yet rich Moti Biryani, ghar par hi restaurant jaise taste ke saath!

📝 Ingredients:

🌾 For Rice:

  • 2 cups Basmati Rice (soaked 30 mins)
  • 1 Bay Leaf
  • 3–4 Cloves
  • 2–3 Green Cardamoms
  • 1 small Cinnamon Stick
  • Salt (as per taste)

🍗 For Moti (Pearls — Meatballs):

  • 250 gm Chicken/Mutton Keema
  • 1 tbsp Ginger-Garlic Paste
  • 1/2 tsp Garam Masala
  • Salt to taste
  • 1 Green Chilli (finely chopped)
  • 1 tbsp Fresh Coriander
  • 1 tbsp Roasted Besan (binding ke liye)

🍛 For Biryani Gravy:

  • 2 tbsp Oil or Ghee
  • 1 Onion (thinly sliced)
  • 1 Tomato (chopped)
  • 1/2 cup Curd
  • 1 tsp Red Chili Powder
  • 1/2 tsp Turmeric
  • 1 tsp Biryani Masala
  • A few strands of saffron in warm milk
  • Fresh mint and coriander leaves for garnish
  • Fried onions (optional but amazing)

🍳 Step-by-Step Recipe:

🥘 Step 1: Prepare the Moti (Meatballs)

  1. Keema mein sab ingredients mix karo — ginger-garlic paste, green chilli, masale aur thoda roasted besan.
  2. Achhi tarah mix karke chhoti-chhoti moti (balls) bana lo.
  3. In motiyon ko halka sa steam ya shallow fry karo till lightly golden.

🍚 Step 2: Cook the Rice

  1. Ek patile mein paani garam karo with whole spices and salt.
  2. Usme soaked rice daalo aur 80% tak paka lo.
  3. Drain karke side mein rakh do.

🍲 Step 3: Make the Gravy

  1. Ek handi mein ghee garam karo, sliced onions daal kar golden brown hone tak bhuno.
  2. Tomato aur dahi daal ke achhi tarah cook karo.
  3. Masale daalo — red chili, turmeric, biryani masala.
  4. Ab moti daal do aur halka cook karo gravy ke saath.

  1. Handi mein ek layer gravy with moti ki banao.
  2. Uske upar rice ki layer daalo.
  3. Garnish with mint, coriander, saffron milk, fried onions.
  4. Cover with tight lid and dum pe 15–20 minutes low flame pe pakaao.
