😋 Ingredients — Kya Kya Chahiye?
🐐 For Raan Marinade:
- 1 full Mutton Raan (1.5–2.5 kg)
- 1 cup dahi
- 2 tbsp adrak-lehsun paste
- 1 tsp haldi
- 2 tsp lal mirch powder
- 1 tsp dhaniya powder
- 1 tsp jeera powder
- 1 tsp garam masala
- 1 lemon ka juice
- Namak swad anusar
- 2 tbsp oil ya ghee
🍚 Rice ke liye:
- 3 cups Basmati Rice (lamba daana wala)
- 4–5 laung, 2 tej patta, 3 green elaichi, 1 badi elaichi
- 1 chhoti dalchini stick
- Namak swad anusar
🌿 Layering ke liye:
- 1 pinch kesar + 1/4 cup garam doodh
- 1/2 cup birista (fried pyaz)
- Hara dhaniya & pudina (kataa hua)
- 2 tbsp ghee
- 2–3 drops kewra ya rose water (optional)
🍳 Recipe — Step by Step Banaayein:
🔪 STEP 1: Raan Ko Marinate Karein
- Raan ko ache se dho kar, usme deep cuts laga do (masala andar tak jaaye).
- Saare marinade waale ingredients ek bowl mein mix karo.
- Is masale ko raan par ache se laga do — har kona cover hona chahiye.
- Isse fridge mein rakh ke 8 ghante ya overnight marinate hone do. (Zyada time = Zyada taste!)
🍖 STEP 2: Raan Ko Cook Karein
- Ek bada handi ya cooker mein thoda oil/ghee garam karo.
- Raan daalo aur slow flame pe 1–1.5 ghanta pakao (ya cooker mein 4–5 seeti tak).
- Beech mein halka sa palatna — dhyan se, tutna nahi chahiye.
- Jab soft ho jaaye, side mein rakh lo. Masala bhi bacha lo!
🍚 STEP 3: Rice Ko Pakayein
- Chawal ko 30 mins ke liye bhigo do.
- Ek patile mein paani garam karo, masale aur namak daalo.
- Ab soaked chawal daal do aur 90% tak paka lo.
- Pani chaan ke alag rakh lo.
🍛 STEP 4: Biryani Assemble Karein
- Handi ke bottom mein thoda ghee lagao.
- Ek layer chawal ki daalo.
- Beech mein raan ko carefully rakho.
- Bacha hua gravy/masala raan ke upar daalo.
- Upar se fir se chawal ki layer.
- Phir daalo kesar doodh, birista, dhaniya-pudina, kewra aur thoda ghee.
🔥 STEP 5: Dum Time!
- Handi ko foil ya aate se seal karo.
- Low flame pe 25–30 mins dum pe chhodo.
- Ya fir oven mein 180°C pe 25 mins bake karlo.
- Dum ke baad 10 mins rest karo, fir serve karo.
