Kacchi Biryani - Ek Dumdaari Aur Swadisht Dawat!

Jab bhi biryani ka naam aata hai, muh mein paani aa hi jaata hai! Aur agar baat ho Kacchi Biryani ki, toh mazaa aur bhi double ho jaata hai. Yeh ek aisi dish hai jo Hyderabad, Lucknow aur Kolkata jaise shehron ki shaan hai. Lekin aaj hum iski khasiyat aur unique cooking style ke baare mein jaanenge.

Kacchi Biryani Kya Hai?

Kacchi Biryani ek traditional dish hai jo raw (kacche) gosht aur basmati rice ko ek saath dum par pakaane se banti hai. Iska swad alag hi level ka hota hai kyunki masale aur mutton ya chicken ek saath pakte hain aur har bite mein zabardast flavor aata hai.

Kacchi Biryani Banane Ka Tarika

Ingredients:

  • 500g Basmati Rice (shri lal mahal empire rice)
  • 500g Chicken (achhe se dhula hua)
  • 1 Cup Dahi
  • 2 Badi Pyaz (bareek kata hua)
  • 1 Tbsp Adrak-Lahsun Paste
  • 2 Tbsp Biryani Masala
  • 1/2 Tbsp Haldi
  • 1 Tbsp Lal Mirch Powder
  • 1/2 Tbsp Dhaniya Powder
  • 1/2 Tbsp Garam Masala
  • 1 Tbsp Lemon Juice
  • 2 Tbsp Ghee
  • 2 Tbsp Oil
  • Kesar ya Yellow Food Color
  • Biryani Ke Patte (Tej Patta), Laung, Dalchini, Badi Elaichi
  • Fresh Dhaniya aur Pudina Patta (Garnish ke liye)

Step-by-Step Recipe:

  1. Marination: Sabse pehle gosht ya chicken ko dahi, haldi, mirch, adrak-lahsun paste, biryani masala, lemon juice aur thoda sa oil dal kar acchi tarah mila kar 4–5 ghante ya overnight marinate karen.
  2. Rice Prepping: Chawal ko dhokar 30 min tak bhigo dein, phir usko 70% tak boil kar ke side rakhein.
  3. Layering: Ek heavy bottom handi ya cooker lein, usme sabse pehle marinated mutton ko daal dein. Uske upar fried pyaz, fresh dhaniya aur pudina ki layer daalein.
  4. Chawal Add Karein: Ab upar se 70% cooked rice spread karein. Phir thoda kesar ya food color, ghee aur fried pyaz daal kar ek aur layer bana dein.
  5. Dum Process: Handi ka dhakkan ache se band kar ke 40–50 min tak slow flame par dum lagayen. Gas band karne ke baad 10 min tak biryani rest karne dein.
  6. Serve Aur Enjoy Karein: Biryani ko pyaar se mix karein aur raita ya mirchi ka salan ke saath enjoy karein!
