🍚 Khaasiyat kya hai Awadhi Biryani ki?
Lucknowi ya Awadhi Biryani ko Dum Biryani bhi kaha jata hai. Isme har ek layer mein hota hai taste ka explosion! Unlike Hyderabadi Biryani, yeh thodi si subtle, aromatic aur delicately spiced hoti hai. Aur sabse khaas — yahan sab kuch Dum pe hota hai!
🛒 Ingredients — Jo chahiye is Shahi Biryani ke liye:
🌾 Rice ke liye:
- 2 cups — Long-grain Basmati Rice (Shri Lal Mahal Empire Basmati best rahegi!)
- 4 cups — Water
- 1 tsp — Salt
- 2 — Green cardamom
- 1 — Bay leaf
- 4 — Cloves
🥦 Veg Layer ke liye:
- 1/2 cup — Chopped carrots
- 1/2 cup — Beans
- 1/2 cup — Green peas
- 1 — Potato diced
- 1 — Onion (thinly sliced)
- 1/2 cup — Curd (dahi)
- 1 tbsp — Ginger garlic paste
- 1 tsp — Biryani masala
- 1/2 tsp — Haldi
- 1/2 tsp — Lal mirch
- Salt as per taste
- 2 tbsp — Ghee / Oil
🌸 Garnish ke liye:
- Saffron (Kesar) soaked in warm milk
- Fried onions (Birista)
- Fresh mint & coriander leaves
👑 Recipe — Step by Step Nawabi Andaaz mein
🔥 Step 1: Basmati Rice ko Ubalna
Sabse pehle, Basmati rice ko ache se dho kar 20 minutes bhigo dein.
Ek patile mein paani ubalein, thoda sa salt aur khade masale daalein.
Rice ko 80% tak pakaayein — yani thoda kachcha rakhein. Phir chaan kar alag rakh dein.
🍲 Step 2: Veg Masala Tayar Karna
Ek handi ya heavy bottomed pan lein, usme ghee garam karein.
Onions fry karein jab tak golden na ho jaayein.
Ginger garlic paste daalein aur saari sabziyaan bhi add karein.
2–3 minute bhunein, phir masale daalein — haldi, mirch, biryani masala.
Curd mix karein aur dhimi aanch par sabziyaan pakne dein — soft but overcooked na ho.
🧅 Step 3: Layering Ka Kamaal
Ek handi lein, thoda ghee lagayein bottom mein.
Pehli layer daalein veg masala ki, phir rice ki.
Upar se daalein thoda sa saffron milk, fried onions, mint aur coriander.
Isi tarah 2–3 layers banayein. Last layer rice ki ho aur upar se ghee aur saffron daal dein.
🌬 Step 4: Dum Dena — Royal Tadka
Handi ka dhakkan tight karein (ya wheat dough se seal karein).
Low flame par 15–20 minutes tak dum dein.
Chahein to tawa ke upar rakhkar dum de sakte hain.
Flame band karne ke baad 10 minutes aur rest dein.
