Mutton Dum Biryani Recipe – Dum wala Taste, Step by Step 🍗

For Mutton Marination:

  • 500g mutton (bone-in)

For Dum (Layering):

  • Saffron + 2 tbsp warm milk
  • Fried onions (birista)
  • Ghee — 2 tbsp
  • Mint & coriander leaves
  • Kewra water (optional)

👩‍🍳 Step-by-Step Recipe

🥣 Step 1: Marinate the Mutton

Sabse pehle, ek bade bowl mein mutton aur saare marination waale ingredients ache se mix karo. Cover karke fridge mein minimum 3–4 ghante (best: overnight) ke liye rakh do. Isse masale andar tak ghus jaate hain.

🍚 Step 2: Cook the Rice

  • Rice ko 30 mins tak soak karo.
  • Ek pateela mein paani, whole spices aur salt daal kar boil karo.
  • Rice daalo aur 70% tak hi cook karo.
  • Phir strain karke side mein rakh do.

🔥 Step 3: Cook the Mutton

  • Ek heavy bottom handi lo.
  • Marinated mutton ko handi mein daal kar medium flame par 20–25 minutes tak bhuno.
  • Pani chhodta hai toh tension nahi, bas dhyan rahe ki aadha cook ho jaye.

Ab layering ka waqt aa gaya hai!

  1. Handi mein cooked mutton base par rakho.
  2. Upar se half-cooked rice daalo.

  • Handi ko tight lid ya atta laga kar seal karo.
